Make sure its a hot day and you have some strong imported european lager in the fridge.
Get a bowl, throw in some olive oil and plenty of lemon juice and lime juice. When you think you've put in too much put in a bit more. Whisk it up until it goes golden.
Next put in some garlic paste, plenty of cajun spice, plenty of cumin, a touch of tumeric for colouring and then grate in some lemon zest, add some fresh chopped coriander, black pepper and a little shake of dried chilli flakes. Plop in some chopped up chicken breasts and stir it up.
Leave this covered in the fridge and go listen to Mecca & The Soul Brother.
Turn over the chicken, cover and then listen to Stepfather and have a joint.
Fry this chicken up with peppers and onions and serve in pitta breads, wraps or on a naan bread, and here's the most important thing.....with LOTS of feta cheese diced up and sprinkled all over.
SIt in the garden with your food, a beer so cold it hurts your teeth and pop OST on the stereo.
Trust me the marriage of feta cheese and spicy citrusy chicken is magnificent. Throw PUTS, cold beer and sun in the mix and thats a perfect saturday afternoon for you right there.

I'm a massive fiend for these Indian dishes too, Chicken Tandoori, Madras, basically any spicy Indian-chicken dish, love them.
